Blueberries, plums, violets, chocolate, and savory herb notes all emerge from this full-bodied, big, meaty, licorice-laced effort that, like all of Luc’s wines, stays balanced, graceful and pure. Composed of 86% Cabernet Sauvignon with smaller proportions of Cabernet Franc, Merlot, Malbec and Petit Verdot, the 2015 Cabernet Sauvignon Mon Chevalier has a very deep garnet-purple color and vibrant nose of red currant, red plums and lavender with fresh black berries and black cherries, plus wafts of dried herbs and fragrant earth. Medium to full-bodied, the palate reveals the full spectrum of Cabernet flavors, with lovely fine-grained tannins and great freshness providing a firm frame for the tightly wound flavors, finishing long and earthy/minerally. Just gorgeous.

The 2015 Cabernet Sauvignon Mon Chevalier is composed of 90% Cabernet Sauvignon, 6% Cabernet Franc, 3% Merlot, and 1% Petit Verdot. Deep garnet colored, it rolls out with ready-to-go notes of boysenberry preserves, red currant jelly, and plum pudding, plus hints of rose bud tea, tobacco leaf, and sandalwood. The full-bodied palate is rich and opulent with a lively line and velvety tannins, finishing long and spicy.

The 2015 Cabernet Sauvignon Mon Chevalier is a very typical Knights Valley wine. Game, gravel, smoke, licorice, tobacco and incense give the wine its distinctive Graves-like aromatic profile. Ample on the palate, with broad shoulders and terrific fruit intensity, the 2015 has a lot to offer. Like all of these 2015 Cabernets, Mon Chevalier needs time.
