The 2000 vintage was a warm year marked by heat spikes, yet this Elivette shows the cooler brilliance of Spring Mountain fruit and its remarkable ability to weather challenging conditions. It is positively stellar—lifting out of the glass, no, bursting out—with dark black fruit, scorched earth, and fragrant bay laurel and bay leaf, leather and black olive pit. Medium- to full-bodied, it carries an earthy, toasty oak richness, all threaded with iron-like mineral tension. Ultra-powdery tannins, crushed cocoa nibs, and a minty freshness underscore one thing: a delicious factor that’s nearly unbeatable unless you were fortunate enough to already have these bottles in your cellar.
