“The Mont de Milieu from Besson has a classic Chablis nose with aromas of lemon peel, oyster shell and fresh white flowers. The acidity is fresh but not overly so, the texture is lively and silky, and the length is perfect. Understated and elegant, this hits all the notes. The grapes come from a 1ha parcel in the right bank lieu-dit of Mont de Milieu, with an exposition similar to the nearby grand cru slope. They are slowly pressed and fermented mostly in tank (90%) with a small proportion fermented and aged in cask.”
